
With Dover Sole the flavour improves after a couple of days as there is a chemical that develops after death that enhances the flavour naturally. It has a delicate flavour and its flesh is lightly textured but firm. These fillets are prepared by cutting two fillets from each fish or if cut from a very large fillet into individual portions. They are ready to cook.
Its flavour is best preserved by serving it simply grilled. Brush it with melted butter and give it from about 4-6 minutes on each side depending on thickness. It would be nice served with parsley butter and lemon juice.
