Our hand picked fresh white crab meat is delicious when served fresh with a squeeze of lemon in chunky granary bread as a crab sandwich or in fresh crab cakes, lightly pan fried as on the recipe page.
Crab Cakes serves 4
120g fresh crab meat
575g mashed potatoes
2 tablespoons fresh chives (chopped)
Juice of 1/2 a lemon
1 teaspoon worcstershire sauce
4 drops tabasco sauce
2 eggs
2 tablespoons plain flour
120g breadcrumbs
1 tablespoon olive oil
Add the crab meat, lemon juice, chives, Worcestershire sauce and tabasco to the mashed potatoes and mix thoroughly. Seperate the eggas and add the egg yolks to bind the mixture. Season with salt and pepper to taste. Place the bowl in the refrigerator and leave to chill for an hour. Shape the mixture into 4 cakes.
To coat the fish cakes, put the flour onto one plate and season, the breadcrumbs onto a second plate and whisk the egg whites into a bowl. Dip the cakes firstly into the flour, followed by the egg white and lastly the breadcrumbs. Either fry the crab cakes gently or place on a baking sheet, drizzle with oil and bake until golden brown in a preheated oven of 220 degrees C for about 15 mins.
Serve immediately with lemon wedges, tatare sauce and a green salad.
