Salmon Steaks

With its rich distinctive flavour and firm but delicate pink flesh, salmon is a family favourite. These are prepared by cutting across the whole fish so that you have a cross section with the bone in the middle. They are ready to cook.

 

Salmon steaks are very verstaile and can be baked, grilled, poached, pan fried or roasted. Salmon can be baked and served cold with a salad and mayonnaise.

Blackened Salmon Steaks Serves 4

4 Salmon Steaks

100g butter

1 tablespoon paprika

1 teaspoon garlic (crushed)

1 teaspoon cayenne pepper

1/2 teaspoon white pepper

2 teaspoons salt

1 teaspoon thyme

Brush each salmon steak with plenty of melted butter. Mix together the spices seasoning and thyme and sprinkle generously on both sides of the salmon steaks, patting into the salmon flesh with your hands. Heat a large frying pan and add the rest of the butter (about 1 tablespoon per steak). When the butter is hot add the fish and cook on a med to low heat, turning the fish when the underside is very brown and repeat with the remaining side adding more butter if necessary. Serve the fish immediately with more melted butter.
