
Fresh mackerel is one of the finest fish in the sea when eaten fresh and are rich in flavour. This nutritious oily fish can help prvent heart disease. This fish will arrive to you gutted and ready to cook.
Mackerel will bake, grill, pan fry and BBQ. They are excellent plainly grilled, make diagonal cuts on the body and season with salt and pepper and give them about 15-20 minutes under a high grill on both sides. Serve with a tomato salsa or gooseberry puree.
Mackerel with Gooseberry Sauce Serves 4
15g butter
225g gooseberries, topped and tailed
4 fresh mackerel
1 egg , beaten
pinch of ginger
salt and pepper
Melt the butter in a pan, add the gooseberries, then cover and cook over a low heat, shaking the pan until the gooseberries are just tender.
Meanwhile pre-heat the grill. Season the fish inside and out with salt and pepper.
Cut 2-3 slashes across the skin on both sides of each mackerel, then grill for 15-20 mins until cooked, turning once.
Puree the gooseberries with the egg by mashing thoroughly with the egg. Press the gooseberry mixture through a sieve.
Return the gooseberry mixture to the pan and reheat gently, stirring, but do not allow to boil. Add the ginger and season to taste. Serve hot with the mackerel.
