
Herring has a rich flavour that should be eaten fresh. Full of omega 3 oils which are exceptionally good for you. These are prepared by being gutted and having their scales removed. They are ready to cook.
This fish will bake, grill, stir fry, pan fry, deep fry, roast or BBQ.
Herrings in Oatmeal Serves 4
4 large herring (250g each)
salt and pepper
60ml milk
150g medium oatmeal
4 rashers streaky bacon
30g lard
Pour the milk into a bowl and the oatmeal into a second one. Open the herrings out flat and season well. Dip each herring into the milk followed by dipping into the oatmeal, pressing the oatmeal firmly onto the outside of the herring. Remove the rind from the bacon and cut into narrow strips. Melt the lard in a large frying pan and fry the bacon until crisp. Remove them from the pan and keep warm. Put the coated herring into the pan and fry for about 2 mins on each side, or until cooked. Serve the herring with boiled potatoes and salad with a mustardy vinaigrette.
